Cooking with Fire
There are no gas ovens here. Our chefs cook exclusively over hardwood embers and open flame. It is a primal, high-stakes method that imparts a signature smokiness to everything from the slow-roasted root vegetables to the seared venison loin. You sit at the 'Chef's Counter', watching the brigade work in a silent, synchronized dance of heat and timing.
The Wine Cellar
To balance the ruggedness of the food, our cellar is stocked with sophisticated, low-intervention wines. We focus on 'New World' producers who share our philosophy of minimal interference—letting the terroir speak for itself. Our sommelier is on hand to guide you through obscure varietals that you won't find on a standard list.
